This ultra moist and fluffy applesauce cake has unsweetened applesauce for apple flavour and four spices for warmth and depth. The brown butter cream cheese frosting tops it off perfectly!
– 1 teaspoon ground ginger– ½ teaspoon ground nutmeg– ¼ teaspoon ground clove– 1 ½ cups unsweetened applesauce (375 grams)– 1 cup packed light or dark brown sugar (200 grams)
– ½ cup granulated sugar (100 grams)– ⅔ cup canola or vegetable oil– 2 large egg– 2 teaspoon pure vanilla extract
Direction
Mix flour, baking powder, baking soda, and spices in a large bowl. Mix applesauce, oil, eggs, vanilla, and both sugars in another bowl.

Combine wet and dry ingredients. Not overmixing the batter prevents a dense cake. In a greased 9x13-inch baking dish, bake batter until a toothpick inserted centre comes out clean.
Insert sliced butter into a light-colored saucepan to check doneness. Melt butter medium. Cook butter for 5–10 minutes after melting. Stir butter or pan often to avoid burning.

Remove the pan from heat and pour into a heat-proof container when you see brown butter on the bottom and smell nuts. Let it cool for 3 hours to solidify and return to room temperature.

Mix room-temperature brown butter (brown bits included) and cream cheese in a paddle-attached stand mixer. Adding vanilla and powdered sugar. Combine by beating. Enjoy frosting the cooled cake!
