Chilled Ramen Noodle Salad With Peanut Dressing Recipe


Chilled Ramen Noodle Salad with Peanut Dressing is a quick and healthy way to use a well-known noodle. 


FOR THE SALAD: – 2 (3-oz.) packages ramen noodles, seasoning packets discarded – 1 cup shelled edamame – 2 cups finely shredded purple cabbage – 1 cup shredded carrot – 1/2 cup slivered almond – 1/4 cup sliced scallion FOR THE DRESSING: – 1/3 cup creamy peanut butter – 1/4 cup low-sodium soy sauce – 2 Tablespoons fresh lime juice – 1 Tablespoon sesame oil – 1/4 cup honey – 1 Tablespoon minced garlic – 1/4 teaspoon crushed red pepper flakes (optional) – 2 teaspoons sesame seeds, for garnishing



MAKE THE SALAD :- Warm up a big pot of water. Add the ramen noodles and cook them the way the package says to. Set aside ¼ cup of the boiling water. Then, drain the noodles and put them in a big bowl.

Then put the onions, cabbage, carrots, almonds, and edamame in the bowl and toss them together.  


Step 2

MAKE THE DRESSING:- Use a medium-sized bowl to mix the peanut butter, soy sauce, lime juice, sesame oil, honey, garlic, crushed red pepper flakes (if you want), and hot water.   


Step 3

Whisk the ingredients together until the peanut butter is smooth. Add the sauce to the bowl with the vegetables and noodles, and then toss everything together.  


Step 4

Add sesame seeds on top and serve, or let it cool fully before putting it in the fridge and covering it with plastic wrap.
