Chocolate Lava Cakes with Raspberry Sauce Recipe

INGREDIENT

FOR THE LAVA CAKES: – 1/2 cup unsalted butter, plus more for greasing ramekin – 4 oz. semi-sweet chocolate, chopped – 1/8 teaspoon kosher salt – 1 teaspoon vanilla extract – 2 large egg – 2 large egg yolk – 1 cup confectioners’ sugar – 2/3 cup all-purpose flour – Whipped cream or ice cream, for serving FOR THE RASPBERRY SAUCE: – 1 cup fresh raspberrie – 1/4 cup sugar, or more to taste – 1/4 cup water, plus more as needed

INSTRUCTION

MAKE THE LAVA CAKES:- Heat the oven to 425°F. Butter the ramekins and set aside. Stir butter and chocolate in a large microwave-safe bowl for 30 seconds at a time until melted.

Step 1

Mix in salt and vanilla. After whisking the eggs and yolks, add the confectioners' sugar and flour until mixed.

Step 2

Place buttered ramekins on a baking sheet and pour batter evenly. Bake the lava cakes for 10–12 minutes until firm but slightly jiggly in the centers. While the lava cakes bake, make the raspberry sauce.

Let the lava cakes cool for 5 minutes after baking. Invert each lava cake onto a serving platter after carefully knife-ing the inside edge of each ramekin.
