– Cinnamon Roll– 1/2 cup brown sugar– 1 teaspoon baking soda– 1/2 teaspoon salt– 1/2 teaspoon vanilla extract– 1 large egg– 1 cup buttermilk– 2-3 cups all-purpose flour– Cinnamon Roll Filling– 2 tablespoons butter, softened– 2/3 cup brown sugar 3/4 teaspoon ground cinnamon– Glaze– 1 cup powdered sugar– 4-6 tablespoons heavy cream

Preheat oven to 350°. Spray a 12-cup muffin tray with cooking spray. Set aside.

Mix brown sugar, baking soda, salt, vanilla, and egg in a large bowl. Mix with a whisk. Add buttermilk and mix well.

Add 2 cups flour to the wet mixture. Mix with a wooden spoon or spatula. Add flour 1/4 cup at a time until the dough forms a "ball" and doesn't stick to the bowl.

Spray a countertop or big cutting board with cooking spray and sprinkle 1/4 cup flour on top.

Dump the dough on the counter and knead for 1-2 minutes. Add more flour if the dough is too sticky to handle. Roll the dough into a large rectangle with a rolling pin.

About 12"x18" cookie sheet size. Spread softened butter on dough (hands work best). Mix the brown sugar and cinnamon in a small bowl and sprinkle over the butter.

Roll it into a tight "log" from the long end. Split the log in half and cut each half into 6 slices. Put one cinnamon roll slice in each muffin cup.

Bake 13-15 minutes. Muffins shouldn't be overbrowned. Their color should be minimal.

Pour the glaze over warm cinnamon roll muffins by mixing powdered sugar and heavy cream.
