LAMB– 2.5 pounds of lamb chop– 1/4 cup extra-virgin olive oil– 1 teaspoon red wine vinegar– 1 clove of garlic– finely chopped fresh mint– juice of one lemon– salt– pepperAMMOGLIO SAUCE– 1/2 cup extra-virgin olive oil– juice of one lemon– 2 large tomatoe– 1 clove garlic– 1 tablespoon chopped fresh rosemary– 1 tablespoon chopped fresh mint– 1/2 teaspoon kosher salt

LAMBMix lamb marinade ingredients in a small bowl. Pour marinade over lamb chops and mix well. Leave the chops marinating for at least an hour or overnight.

AMMOGLIO SAUCEMix the ammoglio ingredients in a medium bowl. Let sit at room temperature for 45 minutes.

Set the grill outside to medium-high heat.Remove the lamb from the sauce.

Grill until desired. The markings on both sides show sweating, indicating medium rare (our grill took 5 minutes per side).

Spoon the sauce over grilled lamb chops on a platter and let it sit for a few minutes before serving.
