Egg Salad Sandwich with Bacon Recipe

A classic meal is the Egg Salad Sandwich with Bacon, which has creamy egg salad, green lettuce, and crispy bacon on toasted bread. Leftover hard-boiled eggs make a simple egg salad with celery, green onion, and creamy mayo.   

– Egg Salad – 6 large hard boiled egg – 1/4 cup mayonnaise – 1/4 cup finely diced celery  – 2 tablespoons thinly sliced green onion – 1½ teaspoons yellow mustard – ⅛ teaspoon kosher salt – ⅛ teaspoon black pepper – To Assemble – 8 slices bread – 4 strips cooked crispy bacon – Green leaf lettuce

With a knife and a cutting board, cut the hard-boiled eggs into bigger pieces.

Mix chopped eggs, mayonnaise, celery, green onion, yellow mustard, salt, and pepper in a bowl. Stir the salad with a wooden spoon or spatula until incorporated.

Refrigerate egg salad for 1-2 hours before serving or serve it immediately.

Scoop egg salad over toasted bread. Add a half-bacon slice, green lettuce, and another slice of toasted bread. Half or diagonally sliced. Enjoy!
