Fruity Baked Oatmeal Recipe

Quick oats, blueberries, peaches, and diced apple baked oatmeal. Sweetened with brown sugar and 3 cups oats. Warm, cozy, and breakfast or snack-friendly.  

– 3 cups quick oat – 1 cup light brown sugar – 2 teaspoons baking powder – 1 teaspoon salt – 1/2 teaspoon ground cinnamon – 2 large eggs, lightly beaten – 1 cup milk – 1/2 cup (1 stick) butter, melted – 3/4 cup peeled, chopped apple – 1/2 cup fresh blueberrie – 1/2 cup fresh or canned peaches, chopped – Additional milk and chopped fruit for serving

Pre-heat oven to 350. Spray an 8x8 baking dish with cooking spray.

Mix oats, brown sugar, baking powder, salt, and cinnamon in a large basin. Mix clumps with a wire whisk.

In a smaller bowl, mix milk, melted butter, and softly beaten eggs (I crack the eggs and use a fork). Whisk.

Step 3

Stir the milk mixture into the oatmeal until incorporated. Mix in the fruit gradually.

Step 4

Spread oatmeal batter in dish. Add chopped peaches and blueberries if desired.

Bake 35-40 minutes. Golden brown edges with a set, slightly jiggly middle.

After cooling for 10-15 minutes, cut into squares. Pour milk over the bowl or put milk in the bottom, then top with chopped fruit.
