Healthy Dark Chocolate Chunk Oatmeal Cookie Bars Recipe 

Healthy Dark Chocolate Chunk Oatmeal Cookie Bars sweeten Friday. One-bowl oatmeal cookie bars with dark chocolate chunks and flaky sea salt are terrific weekend snacks. They're simple and healthful with whole grain oats, whole wheat flour, coconut or olive oil, and less sugar. Most importantly, everyone likes these bars! They're hard to goof up and always look great.  

Ingredient

– 2 1/2 cups old fashioned oats – 1 cup all-purpose flour – 1 cup white whole wheat or whole wheat pastry flour – 1/2-3/4 cup light brown sugar, us more for a sweeter cookie (I use only 1/2 cup) – 1/4-1/2 cup granulated sugar, us more for a sweeter cookie (I use only 1/4 cup) – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 1 cup melted coconut oil – 2 large eggs – 1 tablespoon vanilla extract – 1 1/2 cups dark chocolate chunks

Start with an oven that is 350 degrees. Cover a 9x13-inch baking dish with foil or butter it.

In a stand mixer or big bowl, mix the wheat germ, flour, whole wheat flour, brown sugar, white sugar, baking soda, salt, coconut oil, eggs, and vanilla.

Beat until the dough is completely moistened and the ingredients are mixed in. Dough that is broken up. Add chocolate chunks.

Put the dough in the baking dish and press it down. Is it falling apart? For 18 to 20 minutes, or until the edges are brown and hard, bake the bars.

A flaky salt can be added if desired. After it has cooled, section it into bars.
