Homemade Monkey Bread Recipe

Pull-apart bread with a gooey caramel sauce is called monkey bread. I made the monkey bread dough from scratch instead of using biscuits from a can. 

INGREDIENTS 

– ¼ cup warm water 110°F-115°F plus 1 teaspoon granulated sugar – 1 (0.25-ounce) package active dry yeast (2 ¼ teaspoons or 21 grams) – 5 tablespoons granulated sugar (62 grams) – 3 tablespoons unsalted butter at room temperature (45 grams) – 1 ¼ teaspoons salt – 1 cup whole milk (240 ml)

INGREDIENTS 

– 1 large egg at room temperature – 4 to 5 cups all-purpose flour spooned & leveled (500-625 grams) – ½ cup unsalted butter (115 grams) – 1 cup granulated sugar (200 grams) – 1 Tablespoon ground cinnamon – ½ cup unsalted butter sliced (115 grams) – ½ cup packed light brown sugar (100 grams)

INSTRUCTIONS

Mix the teaspoon of sugar with warm water until dissolved. Sprinkle yeast on top and gently mix into water. Let sit for 5–10 minutes until yeast foams. Add 5 tablespoons of granulated sugar, butter, and salt to a heat-proof bowl or stand mixer. Set aside.

Pour milk into a small saucepan and heat on medium, stirring often. Milk will steam and bubble around the edges. Remove the milk from heat when it bubbles before boiling. Add scalded milk to sugar, butter, and salt and whisk until combined. Set aside and cool to 110°F or 43°C.

When the scalded milk mixture cools, add 2 cups (250 grammes) of flour by hand or with a dough hook. Add egg to yeast mixture and mix well. Mix 2 more cups (250 grammes) of flour until fully combined, then add 1–2 tablespoons at a time until the dough is easy to handle.

Shape the dough into a ball and place it in a lightly greased bowl. Cover and let rise in a warm place for an hour until doubled. Melt the butter in a microwave-safe bowl or small pot over medium-low heat. Allow to cool slightly.

Heat milk and butter in a large saucepan on medium, stirring occasionally. Remove simmering mixture from heat and let cool. Beat eggs and sugar in a large bowl with a handheld mixer or stand mixer bowl with the whisk attachment for 5 minutes until thick and light. Add oil and vanilla and mix.Mix granulated sugar and ground cinnamon in a separate bowl.
