Muffin Tin Lasagna Cups Recipe

You can eat with your fingers instead of forks with this quick and easy Muffin Tin Lasagna Cups recipe that is great for parties.  

INGREDIENT

– Cooking spray – 24 wonton wrapper – 1/2 pound Italian sausage (sweet or spicy) casings removed – 1 Tablespoon olive oil – 1/2 cup homemade or store-bought marinara sauce – 1/3 cup whole milk ricotta cheese – 1/2 cup grated Parmesan cheese – 1 large egg – 2 teaspoons Italian seasoning – 1 cup shredded mozzarella cheese

INSTRUCTION

Prepare a 12-cup muffin tin with cooking spray. Place two wonton wrappers in each cup, slightly overlapping and with edges 1 inch outside. Heat the oven to 350°F.

Step 1

Add oil and meat to a large skillet over medium heat. Spread the sausage with a spatula and heat until done. Add marinara and mix. Remove skillet from heat.

Step 2

Mix ricotta, Parmesan, egg, and Italian spice in a small bowl. Divide the ricotta mixture into muffin tin cups, then dollop the sausage mixture on top.

Step 3

Sprinkle mozzarella cheese over each lasagna cup and bake for 12–15 minutes until the wontons are crispy.

Step 4

The lasagna cups should cool for 10 minutes in the muffin tin before being taken out and served.
