1-Pot Tomato Soup Recipe

Make this one-pot tomato soup instead of buying it at the supermarket. If you've ever tasted canned soups, you know they're bland yet convenient. 

Ingredient

– 2 tablespoons olive oil – 1 onion, diced – 1 stick celery, diced – 1 large carrot, diced – 2 cloves garlic, minced – 2 14-ounce cans whole peeled tomatoe – 1 tablespoon tomato puree – 4 cups chicken stock – 2 teaspoons sugar – salt, to taste – pepper, to taste, plus more for garnish

Direction

In a big pot, heat the oil. Add the onion, celery, and carrot. Cook for about 6 to 8 minutes, until the vegetables are soft.

After that, add the garlic and continue to simmer for one minute.

Put the tomato puree, chicken stock, sugar, salt, and pepper to taste into the pan.

 Stir it well, then bring it to a boil and let it cook for 15 minutes.

Put the soup in a blender and mix it until it's smooth. You can also use a hand mixer to blend.
