One Pot Chili Mac and Cheese Recipe

A One-Pot Chilli Hard-to-beat mac and cheese. Mac and cheese go with chilli. It takes less than an hour to make in one pot. Buffalo is spicy with hot sauce, onions, peppers, tomatoes, and chili-seasoned meat. Cream cheese, Colby jack, and cheddar make a queso-like chilli topping! 

– 1 pound ground beef  – 1 yellow onion, chopped – 1 poblano pepper, seeded and chopped – 1 tablespoon chili powder – 2 teaspoons garlic powder – 2 teaspoons smoked paprika – 1 teaspoon ground cumin – 1/4 teaspoon cayenne pepper – 1 can (28 ounces) crushed fire-roasted tomatoe – 1/4 cup tomato paste – 1 can (4 ounces) diced green chilie – Salt and black pepper – 2-3 cups chicken or beef broth – 1 pound short cut pasta – 1/4 cup hot sauce – 2 ounces cream cheese, at room temperature – 2 cups shredded melty cheese – Green onions and cilantro, for serving

Heat the oven to 425°F. Add meat and onion to a large pot over medium-high heat. Sprinkle salt and pepper. Break up and brown the meat throughout.

Stir in poblanos, chilli powder, garlic powder, paprika, cumin, and cayenne. Cook 5 minutes until fragrant.

Stir in tomatoes, tomato paste, and diced chilies. Cover broth. Season 2 cups water with salt.

Add pasta. Boil on medium-high. Stir often while simmering for 10 minutes until pasta is al dente. Mix in hot sauce, cream cheese, and half the cheese.

Cook until creamy, another few minutes. Remove from heat and add cheese. Bake until cheese melts, 5-10 minutes.

Place pasta and sauce in bowls and garnish with cilantro and green onions.
