Slow Cooker Butternut Squash Chili Recipe-Learn Like a Pro

The first bite of this thick and rich No Bean Butternut Squash Chili will transport you to a cozy fall day. Start this chili in the morning and simmer it all day in the slow cooker. Wonderful Whole30, Paleo, low-carb, gluten-free chili.  Chili smells comforting at home after a long day.

Ingredient

– 3 tablespoons extra virgin olive oil – 3 cups butternut squash — diced – Fresh sage leave – Fresh rosemary – ½ cup celery — diced – ½ cup red onions — chopped – 2 cloves garlic — minced – 1 pound ground turkey – 2 teaspoons ground cumin – 2 teaspoons paprika – 1 tsp chili pepper – 1 teaspoon ground coriander – Salt and pepper – ½ cup red bell peppers — chopped – 2 cups diced tomato with juice – 1 cup any tomato sauce that doesn't contain sugar – 1 cup broth — vegetable – Fresh cilantro — for garnishing

Salt, pepper, and spices. Mix well and sauté another minute. Add peppers, butternut squash, diced tomatoes, tomato sauce, and chicken broth and boil.

Mix in squash dice. Apply 1 tablespoon extra-virgin olive oil. Add salt. Fresh herbs (I used rosemary and sage from my herb garden). Dried rosemary and sage work.

Seal it with foil paper on top. Bake for 30 minutes. Put the squash in a bowl and set aside after removing the top paper.

Heat the remaining olive oil in a large skillet on medium-high. After heating, add celery and onions. Sauté until onions are translucent (3–4 minutes). Mix in minced garlic. Mix well to avoid browning the garlic.

If you roasted squash in the oven like me, add it to the stew in the last 30 minutes. Since the squash is cooked, just heat it. Stirring will break it up, so be careful. Stir it gently and heat it with the stew.

Use a large lidded saucepan or Dutch oven on medium heat. Use olive oil, coconut, or ghee. If using, add onions and peppers after heating.Stir fry until onion is translucent and peppers soften, 5 minutes.

Salt, pepper, and spices. Mix well and sauté another minute. Add minced garlic and ground turkey (chicken or beef works too). Cook for 5 minutes, breaking up meat with a wooden spoon.
