These Sweet Potato Dinner Rolls are wonderful for Thanksgiving! Soft, supple sweet potato rolls made with actual sweet potato puree are wonderful supper rolls.
– 1 large sweet potato– 1 cup whole milk– 4 tablespoons unsalted butter– 2 large egg– 2 tablespoons pure maple syrup– 1 packet (0.25 oz) instant rapid rise yeast– 1½ teaspoons kosher salt– 4½ cups all-purpose flour– Topping– 1 large egg– Flaky sea salt

Coat a large mixing bowl and 9x13 baking pan with cooking spray for dough rise. Set aside. Pierce the sweet potato 4-5 times with a fork.

After 5 minutes in the microwave, the sweet potato interior should be cooked and fork-tender. Let the potato cool for 5 minutes.

Spoon out the sweet potato's insides. Mash it in a small bowl until lump-free. I recommend using a food processor to get smooth sweet potato puree.

The recipe requires 1 cup of sweet potato puree or mashed. Add mashed sweet potato, milk, melted butter, eggs, pure maple syrup, and instant yeast to a stand mixer with the paddle attachment.

Mix medium-slow until mixed.
Add kosher salt and 2 cups flour. Start mixing again on low speed until the dough gets little sticky and shaggy.

Replace the paddle with a dough hook. Mix the remaining 2.5 cups of flour on medium-low speed. Let the dough hook mix and knead it for 4-5 minutes until it becomes a smooth ball.

The dough will be somewhat tacky and pull away from the bowl sides, but not too sticky to form a ball and transfer to a mixing basin.

The dough ball should go in the large basin you sprayed with cooking spray. Allow the dough to rise at room temperature for 45-60 minutes until it doubles in size under a clean towel.

Divide the dough ball into 15 equal pieces after carefully deflating it. Roll each piece into a ball and place in a 9x3 baking pan. Fork-mix the egg in a small bowl. Next-step egg wash.

let the dough rise again for 30 minutes until the rolls are doubled. As the rolls rise, preheat the oven to 375℉. Bake the rolls till golden brown, 20–30 minutes. Serve hot and enjoy!
