Southwestern Pasta Salad with Avocado Dressing Recipe


For a quick and easy meal in a bowl, try this cool recipe for southwestern pasta salad with avocado sauce that you make yourself.  


FOR THE PASTA SALAD: – 8 oz. uncooked pasta, such as shells, cavatappi or penne – 1 medium orange bell pepper, diced – 1 cup yellow corn (fresh or frozen) – 1 (15-oz.) can black beans, rinsed and drained – 2 medium tomatoes, diced – 1/3 cup sliced scallion – Cotija cheese, for garnishing FOR THE AVOCADO DRESSING: – 1 large avocado, peeled and pitted – 1 cup plain yogurt – 1 teaspoon minced garlic – 2 Tablespoons lime juice – 1 Tablespoon honey



MAKE THE PASTA SALAD:- Boil a large pot of salted water. Cook pasta till al dente, 10–12 minutes. Drain and place pasta in a big bowl. Fill the bowl with bell pepper, corn, black beans, tomatoes, and scallions.  


Step 1

MAKE THE DRESSING:- Put the yogurt, garlic, lime juice, honey, and avocado in a blender. Pulling down the sides as needed, blend until the mixture is smooth.   


Step 2

Add the dressing to the bowl with the pasta and mix it all together by tossing.  


Step 3

Add the cotija cheese to the pasta salad and serve right away, or put it in the fridge with a tight lid until you're ready to serve.
