Asparagus Pasta Salad with Italian Dressing Recipe


There is a quick and easy recipe for asparagus pasta salad that you can make with your own Italian sauce instead of buying one at the store.  


FOR THE DRESSING: – 1/3 cup red wine vinegar – 2 teaspoons freshly squeezed lemon juice – 1 1/2 teaspoons minced garlic – 1 teaspoon sugar – 2 teaspoons dried oregano – 1/2 teaspoon crushed red pepper flakes, or more to taste (optional) – 1/2 cup extra-virgin olive oil FOR THE SALAD: – 1 pound asparagu – 2 1/2 cups uncooked pasta, such as penne or rotini – 2/3 cup sliced red onion – 1 1/2 cups diced tomatoe – 2/3 cup shredded Parmesan cheese, for serving



MAKE THE DRESSING:- In a medium bowl, mix all the ingredients together with a whisk. Set the sauce aside.  


Step 1

MAKE THE PASTA SALAD:- Remove the tough asparagus stems and cut each spear into 1-inch pieces.  


Step 2

Bring a large saucepan of salted water to boil. Cook the pasta until al dente, 10–11 minutes, then add the asparagus and cook for 1 minute. After draining, rinse pasta and asparagus with cool water.


Step 3

Place pasta and asparagus in a large bowl. Mix in onions and tomatoes. After combining the pasta with the dressing, cover the salad with plastic wrap and chill for at least 3 hours or overnight.
