Just a few easy items and 25 minutes will turn this broccoli-cheese stuffed chicken breast recipe into a family favorite.
INGREDIENT
– 4 large boneless, skinless chicken breast– 3 cups broccoli floret– 1 1/2 cups shredded cheddar cheese– 2 oz. cream cheese, at room temp– 1 Tablespoon chopped fresh chives or other fresh herb– Garlic powder, cumin or other spice– 1/4 cup olive oil, divided

INSTRUCTION
Heat the oven to 400°F. Add 2 tablespoons water to a microwave-safe bowl of broccoli. Cover the bowl (a large plate works best) and microwave broccoli for 2 minutes. Remove broccoli from microwave and drain well on paper towels.

Step 1
Return the broccoli to the bowl after cutting it into pea-sized pieces. The bowl should contain cheddar cheese, cream cheese, chives, ¼ teaspoon salt, and ¼ teaspoon pepper. Mix well.

Step 2
Cut a deep pocket lengthwise into each chicken breast on a chopping board without cutting through to the opposite side using a sharp knife.

Press the broccoli mixture into each chicken breast pocket. Sprinkle garlic powder, salt, pepper, and other spices on both sides of the chicken breasts.

Divide olive oil between two ovenproof skillets over medium heat. Once oil is hot, add two chicken breasts per pan. Sear the chicken for 3 minutes on one side, then turn and sear for 2–3 more minutes.

Step 5
Place the skillets in the oven and cook the chicken breasts for 10–15 minutes until the thickest portion reaches 165°F. Remove chicken breasts from oven and serve.
