Brownie+Cookie = Easy Brookie Recipe 

Two favorites—a fudgy brownie and a chocolate and butterscotch chip cookie—are combined in this pan. This recipe teaches beginners to create two recipes at once.    

INGREDIENTS

Brownie Layer – 1 cup granulated sugar 200 grams or 7 ounce – ½ cup canola or vegetable oil – 2 large egg – ½ cup all-purpose flour 70 grams or 2 ½ ounce – ⅓ cup cocoa - natural or dutch 30 grams or scant ounce Cookie Layer – ½ cup unsalted butter 114 grams or 4 ounce – ¾ cup dark brown sugar 150 grams or 5 1//3 ounces* – 1 large egg – 2 teaspoons vanilla extract McCormicks is fine here – ½ teaspoon salt – ½ teaspoon baking soda – 1 cup all-purpose flour 140 grams or 5 ounce – ½ cup chocolate chips 85 grams or 3 ounce – ½ cup butterscotch chips 85 grams or 3 ounce – Additional chocolate and butterscotch chips for top optional – *Light brown sugar is fine, but for the chewiest cookie top dark is preferred. If all you have is light brown sugar whisk 1 tablespoon molasses into the melted butter to make dark brown sugar.

INSTRUCTIONS

STEP-1

Layer Brown Heat the oven to 350°F.  Parchment a 9x9-inch square pan.  Spray non-stick baking release on the paper and pan sides.  Set aside. Mix flour and chocolate.    

STEP-2

Beat the ingredients in a bowl on low to combine, then on medium briefly to mix.  

STEP-3

Pour into prepared pan, smooth top.  Set aside. Cookie LayerA well-scraped mixing bowl doesn't need cleaning. Let butter cool to lukewarm.  Set aside.  

STEP-4

After cooled, stir molasses into butter. Mix flour, baking soda, and salt.  Set aside. Combine butter, brown sugar, egg, and vanilla in a bowl. Blend thoroughly.  

STEP-5

Add flour mixture and beat on low to incorporate, then medium shortly to finish.  Flour often sticks to bowl sides.  Remix after scraping. Mix in all chips.  

STEP-6

To avoid sinking, lightly spoon batter onto the brownie layer with a big spoon.  Cover the entire top. Use an offset spatula to smooth top.  

STEP-7

Add chips if desired. Bake until firm, 35–40 minutes. Cool thoroughly before cutting and twisting.For 16 or more, cut four down and four across.
