Chicken Caesar Pasta Salad Recipe

Chicken Caesar Pasta Salad has crisp lettuce, delicate pasta, salty parmesan, crispy croutons, and juicy chicken covered in creamy Caesar dressing. Cold spaghetti salad is a terrific potluck, BBQ, or gathering side. It makes a fantastic summer grill supper on weeknights.  

– 8 ounces penne pasta OR rotini pasta – 2 boneless, skinless chicken breast – 1 teaspoon garlic powder – 1 teaspoon Italian seasoning – ½ teaspoon kosher salt – ¼ teaspoon black pepper – 2 tablespoons olive oil  – 4 cups chopped romaine lettuce – 1/2 cup Caesar salad dressing – 1/4 cup grated parmesan cheese

Boil pasta in a big pot of salted water. Follow package instructions to cook pasta. Cook al dente or softer as desired. To end cooking, drain and rinse pasta under cold water. Set aside.

Cook Chicken: Combine garlic powder, Italian seasoning, kosher salt, and black pepper in a small bowl. Sprinkle the spice mix on both sides of the chicken breasts and press it in.

Heat olive oil in a skillet over medium-high heat. After heating, fry the chicken breasts for 6-8 minutes per side until golden brown and 165 degrees F.

The chicken should be taken out of the pan and left to rest for a few minutes before it is cut into chunks or thin strips.

To make the pasta salad, put the cooked pasta, chicken breast, and chopped romaine lettuce in a big bowl and mix them together.

Cover everything with the Caesar salad dressing and mix it all together until it's all covered. If you need to, add more sauce. Add the Parmesan cheese and toss it again to mix it in.

Cover the bowl with plastic wrap or a lid and put it in the fridge for at least 30 minutes to an hour. This will give the tastes time to mix and the salad time to cool down before you serve it.
