Chocolate Chip Cookie Brownies (Bookies) Recipe

Not sure whether to have cakes or cookies? This simple recipe for Chocolate Chip Cookie Brownies (Bookies) lets you have the best of both worlds.  

INGREDIENT

FOR THE COOKIE BATTER: – Cooking spray – 1/3 cup unsalted butter, at room temp – 3/4 cup packed light brown sugar – 1/2 cup white sugar – 1 teaspoon vanilla extract – 1/4 teaspoon salt – 2 large egg – 1 1/2 cups all-purpose flour – 1 teaspoon baking powder – 3/4 cup chocolate chip FOR THE BROWNIE BATTER: – 3 Tablespoons vegetable oil – 3 Tablespoons unsalted butter, melted and cooled – 3/4 cup white sugar – 1 teaspoon vanilla extract – 1 large egg – 1/3 cup all-purpose flour – 1/3 cup unsweetened cocoa powder – 1/4 teaspoon baking powder – 1/4 teaspoon salt – Sea salt flakes, for topping

INSTRUCTION

MAKE THE COOKIE BATTER:- Heat the oven to 350°F. Line an 8-inch square baking pan with parchment paper that extends over two sides. Grease with frying spray.

Step 1

Mix the butter, brown sugar, and white sugar in a stand mixer with the paddle attachment for 2 minutes until light and frothy, scraping down the sides.

Step 2

Beat in vanilla and salt. Beat each egg as it is added. Beat in the flour and baking powder until mixed, then the chocolate chunks. Reserve batter.

Step 3

MAKE THE BROWNIE BATTER ;- Stir the egg into the oil, melted butter, sugar, and vanilla essence in a large bowl. Mix flour, cocoa powder, baking powder, and salt in a medium basin.

Step 4

Slowly add dry ingredients to wet components and stir until mixed. Scoop cookie and brownie batter into the baking pan alternately. Sprinkle sea salt on top.

Step 5

Bake the bars until firm, 25–30 minutes. Serve the bars sliced when they cool completely in the pan from the oven.
