Cilantro Lime Chicken is the most flavorful chicken breast recipe marinated in olive oil, fresh lime juice & zest, garlic, cilantro, and dried herbs then baked on a sheet pan for an easy family-friendly dinner.
– 2 tablespoons extra-virgin olive oil– 2 tablespoons chopped fresh cilantro– Zest of 1 lime– Freshly squeezed juice of 2 lime– 3 cloves garlic– 1 teaspoon cumin– 1 teaspoon paprika– ½ teaspoon kosher salt– ¼ teaspoon black pepper– 4 boneless, skinless chicken breast– Fresh chopped cilantro and/or lime wedge

Put the garlic, cumin, paprika, salsa, pepper, lime juice, lime zest, chopped cilantro, olive oil, and shake the bag well. Combine well.

Longwise, cut each chicken breast in half, making two smaller pieces. Make sure the bag is closed after you put the chicken in it with the sauce.

To cover the chicken in the sauce, shake the bag. Put the chicken in the fridge for at least two hours or up to overnight before you bake it.

Warm the oven up to 400℉. Line a 12"x17" sheet pan with a rim with parchment paper or lightly spray it with cooking spray to get it ready.

You can also line the sheet pan with foil, but my advice is to lightly spray the foil with cooking spray or use foil that doesn't stick.

Place marinated chicken breast pieces on the sheet pan and pour/spread remaining marinade over them.

Bake chicken for 20-28 minutes or until an instant-read thermometer registers 165℉ for safety.

Remove the sheet pan from the oven and allow the chicken rest for 5 minutes before serving. This helps juices redistribute and moistens chicken.
