Cinnamon Roll Pancakes Recipe

Cinnamon Roll Pancakes have a simple cream cheese glaze on top and rings of cinnamon and sugar inside them. With all the flavors of a cinnamon roll in a pancake, these are a tasty breakfast treat that the whole family will enjoy.   

– Pancake Batter – 1 cup all-purpose flour – 1½ teaspoons baking powder – ½ teaspoon baking soda – ½ teaspoon kosher salt – 1 cup whole milk – 1 large egg beaten – 2 tablespoons butter melted – 2 tablespoons granulated sugar – 1 teaspoon vanilla extract – Cinnamon Swirl Filling – 6 tablespoons light brown sugar packed – 4 tablespoons butter melted – 2 teaspoons ground cinnamon – Cream Cheese Glaze – 4 tablespoons butter softened – 2 ounces cream cheese softened – 3/4 cup powdered sugar – 1-2 tablespoons half and half – ½ teaspoon vanilla extract

Whisk the flour, baking powder, baking soda, and kosher salt together in a small bowl until they are well mixed.

In a different, bigger bowl, mix the milk, granulated sugar, beaten egg, melted butter, and vanilla extract together using a whisk.

Put the dry ingredients into the bigger bowl with the wet ones. Use a rubber spatula to mix the ingredients together slowly.

There should be some lumps in the pancake batter; you don't want to mix it too much! Let the pancake batter sit at room temperature for 10 to 15 minutes while you make the other mixes.

Do the cinnamon swirl Mix brown sugar, melted butter, and ground cinnamon in a small basin to make a paste. Keep it in a Ziploc bag at room temperature for later use.

Make Cream Cheese Glaze Mix the softened butter, cream cheese, powdered sugar, half-and-half, and vanilla extract in a dish with an electric hand mixer until a thick glaze forms. Save at room temperature.

Making Cinnamon Roll Pancakes Heat a non-stick griddle to 350° F or a skillet pan over medium to medium-high heat after the pancake batter rests.

Use nonstick cooking spray. Spoon pancake batter onto the hot griddle using a 1/4 cup measuring cup.

Use scissors to cut the bottom corner of the Ziploc bag with the cinnamon mixture you placed aside. Immediately swirl the Ziploc bag cinnamon swirl mixture in a circle on each pancake.

Step 9

Keep the swirl 1/4-inch from the pancake edge. After 4-5 minutes, the top bubbles should pop. Flip the pancake gently and cook for 3–4 minutes until golden brown.
