INGREDIENT
FOR THE BUNS:– 2 3/4 cups unbleached all-purpose flour– 1/2 cup finely grated Parmesan cheese– 1 teaspoon salt– 1 teaspoon onion powder– 1 Tablespoon sugar– 2 1/2 teaspoons instant yeast– 4 Tablespoons unsalted butter, softened– 1 large egg– 3/4 cup lukewarm water (See Kelly's Notes)– Vegetable oil, for greasingFOR THE TOPPING:– 1 egg white– 2 teaspoons "everything" seasoning

INSTRUCTION
Mix all bun ingredients in a stand mixer basin with the dough hook. Beat ingredients on high for 2 minutes until dough hook-ready.

Step 1
Lightly oil a large bowl with vegetable oil. Put a dough ball in the bowl. Wrap the bowl in plastic and let the dough rise in a warm, dark place for 60–90 minutes until puffy.

Step 2
Baking sheet parchment. Gently deflate the dough and make 6 normal or 12 slider buns. Form balls of dough, tucking the corners under for smooth tops, and place them apart on the baking sheet to avoid touching.

Step 3
Smooth the balls to a width of 3 ½ inches for conventional buns and 2 inches for slider buns. Wrap the baking sheet in plastic and let the dough rise for 60–90 minutes for fluffy buns.

Step 4
Place the oven rack in the centre and preheat to 350°F. Whisk egg white and 2 tsp water. Apply egg white mixture to bun tops and sprinkle "everything" seasoning (optional).

Bake buns until light and golden brown, 20 minutes. Remove the buns from the oven and cool on a rack.
