For the best Elote Corn Salad recipe, use a spoon instead of a fork. You can use fresh or frozen corn.

– 8 ears corn, husks removed– 1/2 cup diced red onion– 2 Tablespoons unsalted butter– 1/2 cup sour cream– 2 Tablespoons fresh lime juice– 1/2 teaspoon smoked paprika– 3/4 teaspoon cumin– 1/2 cup cilantro, chopped– 2 Tablespoons chopped fresh chive– 1/2 cup crumbled Cotija cheese

INSTRUCTION
Put the corn on a grill or grill pan and cook it. Then, cut the kernels off with a sharp knife.

Put the corn kernels and diced onion in a big bowl. Add the butter, sour cream, lime juice, smoke paprika, cumin, cilantro, Cotija cheese and a pinch of salt and pepper.

Mix the ingredients together while the corn is still warm. If you want, you can add more salt and pepper to the salad after tasting it. Serve right away.
