For the gingerbread: – 1/2 cup (1 stick) unsalted butter, softened – 1/2 cup granulated sugar – 1/2 cup molasse – 1 egg – 2 1/2 cups all-purpose flour – 1 1/2 teaspoons ground ginger – 1 teaspoon ground cinnamon – 1/2 teaspoon ground clove – 1/2 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 cup hot water For the orange sauce: – 1/2 cup orange juice – 1/4 cup granulated sugar – 1 tablespoon cornstarch – 1/4 cup water – Zest of one orange

Heat the oven to 350°F (175°C). Grease and flour a 9x5 loaf pan. Mix softened butter and sugar in a large bowl until frothy.

Add egg and molasses and mix well. Sift flour, ginger, cinnamon, cloves, baking powder, baking soda, and salt in a separate dish.

Add the dry ingredients to the creamed mixture slowly, alternating with hot water. Mix well and smoothly. Add batter to loaf pan and smooth top with spatula.

Place in preheated oven for 50-60 minutes or until a toothpick put into the centre comes out clean.

While gingerbread bakes, make orange sauce. In a small saucepan, mix orange juice, sugar, and zest. Simmer on medium.

Mix cornflour and water in a small bowl until smooth. Gradually stir cornflour into simmering orange juice. Stir frequently until the sauce thickens, 2-3 minutes. Stop cooking and set aside.

Remove the gingerbread from the oven and let it cool in the pan for 10 minutes. Transfer to a wire rack to finish cooling. Orange sauce drizzled gingerbread slices can be served warm or room temperature.
