Muffin Tin Granola Cups Recipe

You can take your granola with you on the go with this easy recipe for Muffin Tin Granola Cups. Fill them with your favourite yoghurt and fresh fruit.  

INGREDIENT

– 1/2 cup honey – 1 1/2 cups rolled oat – 1/4 cup chia seed – 1/2 cup unsweetened coconut – 2 Tablespoons vegetable or coconut oil – 1 teaspoon cinnamon – 1/2 teaspoon salt – Yogurt, for serving – Fruit, for serving

INSTRUCTION

Heat the oven to 350°F. Coat a 12-cup muffin tray well with cooking spray.  Heat honey in the microwave for 20 seconds. (This simplifies granola stirring.)

Step 1

Mix oats, chia seeds, coconut, vegetable oil, cinnamon, salt, and honey in a medium bowl. Mix well.

Step 2

Divide the granola mixture into muffin tin cups and press it down with a measuring cup or shot glass to form a bowl.

Step 3

Bake granola cups for 12–15 minutes until golden brown. Push the measuring cup or shot glass into each cup to reshape the centre wells after removing them from the oven.

Step 4

Wait 30 minutes for the granola cups to cool in the pan, then use a sharp knife to remove them. Serve yoghurt and fresh fruit in granola cups.
