No-Bake Orange Cranberry Cheesecake Parfaits are a great way to free up your oven during the holiday baking rush.
INGREDIENT

INSTRUCTION
MAKE SUGARED CRANBERRIES:- Prepare a baking sheet with foil or parchment. Top with a wire rack. Mix orange juice and ¼ cup sugar in a medium saucepan over medium heat. Whisk the mixture occasionally until the sugar dissolves, about 3 minutes.

Step 1
Stir in the cranberries until coated. Transfer the cranberries to the wire rack with a slotted spoon and cool for 30 minutes.

Put the remaining ¼ cup sugar in a small bowl. Roll the cranberries in sugar in batches to cover all sides. Put the cranberries back on the wire rack when making parfaits.

MAKE THE PARFAITS:- Mix cream cheese in a stand mixer using the paddle attachment until smooth.

Add orange juice, heavy cream, sugar, and vanilla extract and beat for 3 minutes until light and creamy. Snip the tip of a piping bag or sealable plastic bag with cheesecake filling.

To serve, divide crumbled gingersnap cookies among glasses. Pipe cheesecake on top and add sugared cranberries. Serve parfaits with whipped cream and crushed gingersnaps.
