Peanut Butter and Banana Nice Cream Sandwiches Recipe


A frosty recipe for Peanut Butter and Banana Nice Cream Sandwiches turns a favorite dessert into a healthy treat.  


– 2 medium bananas or 3 cups store-bought frozen banana slice – 1/4 teaspoon vanilla extract (optional) – 8 store-bought or homemade peanut butter cookie – Crushed peanuts or sprinkles, for decorating (optional)



Do not peel the bananas. Instead, cut them into 1/4" rounds. Put them on a plate and use plastic wrap to cover it. It will take two hours or more for the bananas to freeze.  


Step 1

Put the frozen bananas and vanilla extract in the bowl of a food processor. For about one minute, pulse the bananas until they become creamy.  


Step 2

Place four cookies on a baking sheet so that the flat sides are facing up. Then, split the banana nice cream among the cookies. Place the second cookie on top and press down to make a sandwich.  


Step 3

If you want, you can cover each ice cream sandwich right away with crushed peanuts or sprinkles.  


Step 4

Place each ice cream sandwich tightly between two pieces of plastic wrap. Freeze for at least two hours, or until the ice cream is solid.
