Do not peel the bananas. Instead, cut them into 1/4" rounds. Put them on a plate and use plastic wrap to cover it. It will take two hours or more for the bananas to freeze.

Put the frozen bananas and vanilla extract in the bowl of a food processor. For about one minute, pulse the bananas until they become creamy.
