Pineapple Chicken Salad Sandwiches Recipe

These Chicken Lettuce Wraps taste just like the ones from the famous P.F Changs restaurant. Ground chicken, sesame oil, garlic, ginger, hoisin sauce, water chestnuts, and a touch of brown sugar and hot sauce. Serve with some bib lettuce for the best ground chicken lettuce wrap.

– Pineapple Chicken Salad – 1 rotisserie chicken 4 cups chunked chicken – 1 cup thinly sliced celery – 1½ cups halved red grape – 1 cup slivered almond – 1 small bunch green onions thinly sliced – 1 can (20 oz) crushed pineapple drained well – Creamy Dressing – 1 bar (8 oz) cream cheese room temperature – 1 cup mayonnaise – 1-2 tablespoons reserved pineapple juice – 1 teaspoon Worcestershire sauce – ½ teaspoon garlic powder – ½ teaspoon kosher salt – ¼ teaspoon pepper

Mix all chicken salad ingredients in a big bowl. Mix the creamy dressing ingredients in a smaller bowl.

Whisk or beat with a handheld blender. Mix the dressing with the chicken salad until fully blended.

Wait at least 4 hours before serving covered in the fridge.

This chicken salad keeps nicely in the fridge without drying out, so it can be made ahead. Serve on croissants, buns, or other bread.
