Sausage Breakfast Casserole Recipe

Breakfast Sausage Casserole combines your favorite breakfasts! Hash browns, eggs, cheese, and sausage crumbles. Try it as is or in breakfast burritos with salsa, sour cream, and cheese.  

– 1 lb ground breakfast sausage – 1 small onion finely chopped – 1 teaspoon kosher salt – 4 cups shredded & thawed hash brown – 6 large eggs lightly beaten – 1 container (16 oz) cottage cheese – 2 cups shredded swiss cheese – 1 cup shredded colby jack cheese OR cheddar cheese

Preheat oven to 350°. Spray a 9x13 baking dish with cooking spray. Set aside.

In a skillet pan over medium-high heat, sauté sausage, sliced onion, and salt until no longer pink. Crumble sausage during cooking.

Mix frozen hash browns, eggs, cottage cheese, and shredded cheese in a large bowl. Mix well.

Step 3

Drain cooked sausage of fat. Add to hash brown mixture and stir. Place in prepared pan and distribute evenly.

Step 4

Cook 45-50 minutes. Golden brown edges with a set, not "jiggly" middle. Serve after 5-10 minutes of pan cooling.
