Instructions:

  • Blend or process the oats in a food processor or blender until they reach a consistency similar to that of flour-like particles.
  • Combine the oat flour, all-purpose flour, brown sugar, baking powder, baking soda, ground cinnamon, and salt in a large mixing bowl. Mix until everything is evenly distributed.

  • Mix thoroughly until everything is incorporated.
  • In a separate bowl, combine the buttermilk, eggs, melted butter, and vanilla extract by whisking them together until they are completely smooth.

  • After adding the liquid ingredients to the dry ones, stir the mixture until it is almost completely combined. Do not overmix the batter; it is acceptable for there to be a few lumps in the mixture.
  • After allowing the batter to rest for approximately five to ten minutes, the oats will be able to absorb some of the moisture.

  • A skillet or griddle that does not stick should be heated over medium heat. Cooking spray or a small amount of butter should be used to lightly grease the surface.
  • Each pancake should have approximately a quarter cup of batter poured onto the skillet. This should take about two to three minutes, or until bubbles appear on the surface of the pancakes and the edges appear to be set.

  • Cook the pancakes for an additional one to two minutes after flipping them, or until they are golden brown and cooked all the way through.
  • The remaining batter should be repeated, and the skillet should be greased as necessary in between each batch.
  • Hot pancakes can be served with a variety of toppings, including fresh berries, sliced bananas, maple syrup, or chopped nuts, depending on your favourite combination.
