  • 1 cup cherry tomatoes, halved

  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard

Instructions:

  • To prepare the pasta, ensure that a large pot of salted water is brought to a boil. After adding the pasta, continue cooking it until it reaches the al dente stage, as directed on the package. The cooking process can be stopped by draining the pasta and rinsing it under cold water afterwards. Move the pasta to a large bowl that can be used for mixing.

 

  • Prepare the Vegetables: While the pasta is cooking, you should get the vegetables ready. Cherry tomatoes should be cut in half, cucumbers should be diced, red onions should be sliced very thinly, and Kalamata olives should be pitted and cut in half.
