Ingredients:

For the crust:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cut into small cubes
  • 4-5 tablespoons ice water

For the filling:

  • 3 medium-sized apples (preferably a mix of sweet and tart varieties such as Granny Smith and Honeycrisp), peeled, cored, and diced

Instructions:

1. Prepare the crust:

  • Put the flour, sugar, and salt into a large mixing basin and mix them together.
  • Incorporate the butter cubes that have been chilled into the flour mixture. You can use a pastry cutter or your hands to massage the butter into the flour mixture until it resembles coarse crumbs.

  • After adding ice water one tablespoon at a time, gradually incorporate it into the dough while gently mixing it until it just comes together.
  • Form the dough into a disk, cover it with plastic wrap, and place it in the refrigerator for at least half an hour while it chills.

2. Make the filling:

  • To prevent the apples from turning brown, place them in a separate bowl and mix them with lemon juice.
  • Brown sugar, granulated sugar, cinnamon, nutmeg, and a little bit of salt should be added to the mixture. To ensure that the apples are evenly coated, stir them.

3. Preheat the oven:

  • Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Use butter or non-stick spray to grease a muffin tin that has a capacity of 12 cups.

4. Assemble the mini pies:

  • On a surface that has been lightly dusted with flour, roll out the dough that has been cooled to a thickness of approximately 1/8 inch.
  • For the bottoms of the pie crust, cut out twelve circles using a circular cutter that is slightly larger than the size of the cups that you will be using for your muffin tins.

  • When you press each dough round into the muffin cups that have been prepared, make sure that the dough extends all the way up the sides.
  • Apply the apple filling to each crust, being sure to pack it down as tightly as possible.

5. Create the lattice crust:

  • Once the remaining dough has been rolled out, it should be sliced into thin strips.
  • By weaving the strips over and under each other, you can create a lattice pattern on top of each individual little pie.
  • Remove any leftover dough, then press the edges together to seal the cake.

6. Bake the mini apple pies:

  • Using an egg wash that has been beaten, brush the tops of the pies.
  • A mixture of sugar and cinnamon should be sprinkled over the pies in order to impart additional sweetness and flavor.
  • After the oven has been warmed, place the muffin tin inside and bake for twenty to twenty-five minutes, or until the crust is crisp and golden brown and the filling is bubbling.

7. Serve and enjoy:

  • The small apple pies should be allowed to cool for a few minutes inside the muffin tin before being removed from the muffin tin with caution.
  • Serve either warm or at room temperature, with a scoop of vanilla ice cream or a dollop of whipped cream at the table, as an optional accompaniment.
